Great Northern Bean Salad with Sesame Sauce

Ingredients

  • 1 lb. Joan of Arc® Great Northern Beans (drained and rinsed)
  • 4 whole fresh tomatoes (diced)
  • 2 whole large red onions (sliced fine)
  • 2 whole green bell peppers (diced fine)
  • 2 bunches Italian parsley (washed and dried)
  • 1 1/2 tsp. salt
  • 1 tsp. black pepper (freshly ground)
  • 1/2 cup Regina ® Red Wine Vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 cup Tahini Paste
  • 2 lemons (juiced)
  • 4 whole hard-boiled eggs (quartered or sliced)
  • 24 whole kalamata olives

Directions

Cut parsley into sprigs. Toss drained beans, onions, tomatoes, peppers, parsley sprigs, salt, pepper, olive oil, and vinegar. Blend Tahini paste with lemon juice and toss into salad. Check seasoning. Garnish with eggs and olives.
